How to make it

  • Preheat the oven to 220˚C (425˚F). Put the potato on a chopping board, flat side down. Start from one end of the potato, cut almost all the way through, at about 3 to 4 mm intervals.
  • Arrange the potatoes in a baking tray and insert the garlic in between the slits. Scatter some butter on top of each potato. Then drizzle the olive oil and sprinkle some sea salt and freshly ground black pepper.
  • Bake the potatoes for about 40 minutes or until the potatoes turn crispy and the flesh is soft.

    I am definently going to make these as a side for my melt in the mouth Baby Backs I make for the family. I do a bunch of racks of ribs in a season Hmmmm close to 60 this last summer.     You can also double wrap these in heavy duty tin foil and toss them into camp fire coals for 40 minutes...they come out great!

    To make sure you dont cut all the way through potato poke a metal skewer right trhrough potato about 5 mm from dflat bottom. This will stop knife going any further.
