Ingredients
  • ngredients:
  • 1 18 ¼ oz Package of Lemon or Yellow cake mix
  • 1 Stick of butter or margarine, softened
  • 1 egg plus 3 egg yolks
  • 2 cups finely crushed saltine crackers
  • 1 ( 14oz ) can Eagle Brand Sweetened Condensed Milk ( Not evaporated milk )
  • ½ cup RealLemon Lemon juice from concentrate

Directions
  1. 1)Preheat oven to 350º. In large bowl, beat cake mix, margarine and 1 egg with mixer until crumbly. Stir in saltine crumbs. Reserving 2 cups crumb mixture, press remaining crumbs on bottom of a greased 13” x 9” inch baking pan.
  2. 2)Bake 20 minutes.
  3. 3)With mixer or wire whisk, beat 3 egg yolks, sweetened condensed milk and lemon juice. Spread over prepared crust. Top with reserved crumb mixture.
  4. 4)Bake 25 minutes or until set. Cool. Cut into bars. Store covered in refrigerator.
