LEMON CRUMB BARS

- ngredients: shopping list
- 1 18 ¼ oz Package of lemon or yellow cake mix shopping list
- 1 Stick of butter or margarine, softened shopping list
- 1 egg plus 3 egg yolks shopping list
- 2 cups finely crushed saltine crackers shopping list
- 1 ( 14oz ) can Eagle Brand sweetened condensed milk ( Not evaporated milk ) shopping list
- ½ cup RealLemon lemon juice from concentrate shopping list
How to make it
- 1)Preheat oven to 350º. In large bowl, beat cake mix, margarine and 1 egg with mixer until crumbly. Stir in saltine crumbs. Reserving 2 cups crumb mixture, press remaining crumbs on bottom of a greased 13” x 9” inch baking pan.
- 2)Bake 20 minutes.
- 3)With mixer or wire whisk, beat 3 egg yolks, sweetened condensed milk and lemon juice. Spread over prepared crust. Top with reserved crumb mixture.
- 4)Bake 25 minutes or until set. Cool. Cut into bars. Store covered in refrigerator.
