To start out with, I would use 1 cup of coconut milk, 2 tablespoons of virgin coconut oil, and the shredded coconut to taste...maybe about 1 to 1 1/2 cups. Melt the oil and whisk it into the coconut milk before adding it to the rest of the batter. I would then taste it to see if it needs more of a "coconutty" taste and if so add about 1/4 cup more of coconut milk.
