Ice cream is a favorite summer dessert, and what’s better then a bowl of freshly churned homemade ice cream? This is a rich, creamy, airy ice cream that is easy to whip up with or without an ice cream maker. Recipe is from FreeCoconutRecipes.com

  • ¼ cup Tropical Traditions Coconut Cream Concentrate
  • 1 pint half n’ half or heavy cream
  • 1 14 oz. can sweetened condensed milk
  • 2 teaspoons vanilla or almond extract
  • ¼ teaspoon freshly grated nutmeg, optional
  • ground up nuts of choice, optional

Directions
  1. Warm Coconut Cream Concentrate gently over low heat until soft.
  2. Blend all ingredients together until smooth.
  3. Place mixture in your ice cream maker, following manufacturer instructions. Let run until it has reached the desired consistency.
  4. Freezer Method: Prepare ice cream batter as the recipe below states in a large metal mixing bowl.
  5. Place bowl in a very cold freezer and pack frozen things around it.
  6. Every 30-40 minutes, whisk the ice cream and break up the clumps and incorporate it back into the mixture.
  7. Continue until ice cream has reached desired consistency. When the ice cream becomes too thick to whisk by hand, use a hand held mixer or a standing mixer fitted with a balloon whisk. (Do this quickly though since it melts fast!)

Love coconut!! I want to make this but probably won't get the Coconut Cream Concentrate before I do make it. What amounts of the following, which I do have on hand, can I use to make this (or another recipe you create) Coconut Ice Cream: organic Coconut Milk (which has 72 gr. of fat per 1-1/2 cups=13.5oz can); (solidified) organic Coconut Oil - I have both refined & unrefined; Goya brand of "100% Fruta Coconut" (shredded fresh, then frozen, tasting like freshly grated soft, mature coconut). I want to make coconut ice cream with these great ingredients so very much, that I'll make up a recipe if you don't.... :)

Alterations


Hi Rhianna!
To start out with, I would use 1 cup of coconut milk, 2 tablespoons of virgin coconut oil, and the shredded coconut to taste...maybe about 1 to 1 1/2 cups. Melt the oil and whisk it into the coconut milk before adding it to the rest of the batter. I would then taste it to see if it needs more of a "coconutty" taste and if so add about 1/4 cup more of coconut milk. I hope that helps! :) Please feel free to let me know how it turns out for you. :)
