Quotpolentaquot Sausage Bake Recipe
This recipe uses a Jiffy corn muffin mix to make the "polenta" part of the casserole. It is easy and delicious. Completely doable on a weeknight. It can be even quicker to put together if you use a preppred marinara sauce.

Ingredients
  • 1 8 1/2 ounce box of Jiffy Corn muffin mix
  • 1/2 cup of grated Parmesan cheese
  • 1/2 cup of milk
  • 1 large egg
  • -----------------------------------------------------
  • Topping:
  • 2 tbsp of olive oil
  • 1 large onion chopped
  • 2 cloves of garlic chopped
  • 8 ounces of sliced mushrooms
  • 1 can of diced tomatoes (15 1/2 ounce can)
  • 6 tbsp of tomato paste
  • 1/2 tsp of marjoram
  • 1/2 tsp of oregano
  • 1 tsp of sugar
  • big pinch of salt
  • 1/2 tsp of crushed red pepper flakes
  • Or use a big jar of your favorite marinara for the above-but I like bigger pieces of veggie in my sauce.
  • 1 lb of sausage, your favorite? Italian mild or hot, turkey or pork
  • squeeze it out of the casing and cook it up, drain off fat.
  • 1 lb. of Monterey jack cheese, a good melting cheese

Directions
  1. Preheat the oven to 375.
  2. Spray a 2 quart casserole dish or oblong baker with pam, very well.
  3. Mix the polenta, muffin mix, parm, milk and egg.
  4. Spread over the bottom of the prepped pan.
  5. Heat oil in a large saute pan and cook the onion, garlic and mushrooms about five minutes.
  6. Add the tomatoes,paste and seasonings.
  7. Stir and cook until it thickens lightly.
  8. Remove from heat.
  9. Layer half the cooked sausage over the cornmeal batter
  10. Evenly top with the tomato sauce.
  11. Top with remaining sausage pieces.
  12. Bake for 15 minutes.
  13. Top with as much cheese as you want.
  14. Put back in the oven and bake for 10 minutes more until the cheese is very bubbly.

Don't you luv the jiffy mix? We use it as a topping for tamale pie. (Tom doesn't care for polenta's texture)Will try this soon!

Sounds really good for a weeknight. Single dad 's love casserole type meals during the week. And it sounds like fishtrippin has the same tamale pie recipe I have (seasoned meat on the bottom & Jiffys on top). This will be a new addition to the schoolyear arseanl. :)
