Quotpolentaquot Sausage Bake

- 1 8 1/2 ounce box of Jiffy corn muffin mix shopping list
- 1/2 cup of grated parmesan cheese shopping list
- 1/2 cup of milk shopping list
- 1 large egg shopping list

- Topping: shopping list
- 2 tbsp of olive oil shopping list
- 1 large onion chopped shopping list
- 2 cloves of garlic chopped shopping list
- 8 ounces of sliced mushrooms shopping list
- 1 can of diced tomatoes (15 1/2 ounce can) shopping list
- 6 tbsp of tomato paste shopping list
- 1/2 tsp of marjoram shopping list
- 1/2 tsp of oregano shopping list
- 1 tsp of sugar shopping list
- big pinch of salt shopping list
- 1/2 tsp of crushed red pepper flakes shopping list
- Or use a big jar of your favorite marinara for the above-but I like bigger pieces of veggie in my sauce. shopping list
- 1 lb of sausage, your favorite? Italian mild or hot, turkey or pork shopping list
- squeeze it out of the casing and cook it up, drain off fat. shopping list
- 1 lb. of monterey jack cheese, a good melting cheese shopping list
How to make it
- Preheat the oven to 375.
- Spray a 2 quart casserole dish or oblong baker with pam, very well.
- Mix the polenta, muffin mix, parm, milk and egg.
- Spread over the bottom of the prepped pan.
- Heat oil in a large saute pan and cook the onion, garlic and mushrooms about five minutes.
- Add the tomatoes,paste and seasonings.
- Stir and cook until it thickens lightly.
- Remove from heat.
- Layer half the cooked sausage over the cornmeal batter
- Evenly top with the tomato sauce.
- Top with remaining sausage pieces.
- Bake for 15 minutes.
- Top with as much cheese as you want.
- Put back in the oven and bake for 10 minutes more until the cheese is very bubbly.

Don't you luv the jiffy mix? We use it as a topping for tamale pie. (Tom doesn't care for polenta's texture)Will try this soon!

Sounds really good for a weeknight. Single dad 's love casserole type meals during the week. And it sounds like fishtrippin has the same tamale pie recipe I have (seasoned meat on the bottom & Jiffys on top). This will be a new addition to the school...more
