This recipe uses a Jiffy corn muffin mix to make the "polenta" part of the casserole. It is easy and delicious. Completely doable on a weeknight.
It can be even quicker to put together if you use a preppred marinara sauce.

Sounds really good for a weeknight. Single dad 's love casserole type meals during the week. And it sounds like fishtrippin has the same tamale pie recipe I have (seasoned meat on the bottom & Jiffys on top). This will be a new addition to the schoolyear arseanl. :)
