Ingredients

How to make it

  • Preheat the oven to 375.
  • Spray a 2 quart casserole dish or oblong baker with pam, very well.
  • Mix the polenta, muffin mix, parm, milk and egg.
  • Spread over the bottom of the prepped pan.
  • Heat oil in a large saute pan and cook the onion, garlic and mushrooms about five minutes.
  • Add the tomatoes,paste and seasonings.
  • Stir and cook until it thickens lightly.
  • Remove from heat.
  • Layer half the cooked sausage over the cornmeal batter
  • Evenly top with the tomato sauce.
  • Top with remaining sausage pieces.
  • Bake for 15 minutes.
  • Top with as much cheese as you want.
  • Put back in the oven and bake for 10 minutes more until the cheese is very bubbly.

    Sounds really good for a weeknight. Single dad 's love casserole type meals during the week. And it sounds like fishtrippin has the same tamale pie recipe I have (seasoned meat on the bottom & Jiffys on top). This will be a new addition to the schoolyear arseanl. :)

    Don't you luv the jiffy mix? We use it as a topping for tamale pie. (Tom doesn't care for polenta's texture)Will try this soon!
