Blueberry Bread

    Blueberry Bread This is very good. Method and cook time is spot on . I did have a problem getting the loaf out of the pan . Directions say to let it cool for 10 minutes in the pan , and then remove to rack to cool. I did just that , but part of the bottom stayed in the pan. I think it needed more cooling time in the pan. Will try it again . Recipe by chefbaudri . Made 7-2-16 .

Try greasing *and* flouring the pan and lining the bottom with parchment paper. That works for me when I have something that tends to stick. Then just carefully peel off the parchment from the bottom and cool the bread completely on a wire rack. Then you won't miss a bite of this yummy looking bread! Saved. :)

    I agree with Bakerme about greasing and flouring the pan to prevent sticking :)

    It's really good! I thought I might add a glaze to it, but it doesn't need it. Perfect sweetness with a hint of caramel from the brown sugar. The sour cream keeps it nice and moist. The brown sugar and hint of baking soda give it a darker colour than the typical white cake/muffin. So it might not be as pretty, but it's sure delicious!

    It does taste very good . I did grease the pan with coconut oil , but did not flour . Maybe my choice of oil was not the right thing. I like the idea of the parchment paper. Makes perfect sense. I have another pint , and can't decide if I want to freeze them , try this recipe again , or Bakerme's muffins.

    Lumpy, you can still rate it based on the taste and texture, but note in your review the problem you had getting it out of the pan and suggest the recipe submitter edit the recipe to include greasing *and* flouring the pan. I did that with this recipe: Peanut Butter Pancakes Just a thought.

    I didn't even try to take it out of the pan. I usually don't remove it from the pan unless I'm putting a glaze on it. :)

    No problem with the loaf sticking when using sprayed parchment paper. Used an oil with flour spray. Added pics to recipe.

    Your loaf looks really good Points! Mine turned out really dark and not pretty like yours......I wonder why? I always use unbleached flour but my other loaves never turned a dark golden colour thru out? Hmmm, maybe it's my brown sugar, I use an all-natural brown sugar made from cane syrup. I'll have to try it again and see how it turns out next time. :)
