    Broccoli Casserole
Great recipe. Put 1 T instead of 1 t of all-purpose seasoning because of my feeble mind. It was a Cajun flavor. Don't think it messed up the recipe at all but I wouldn't add any more S&P at the end.

Thanks Points. I think the extra seasoning wouldn't hurt a bit. Your picture is awesome. I'd love it if you added it to my recipe page!

That sounds good and cheesy! Do you par boil the broc before adding it to the casserole?

No the florets go in raw. But I did add the stems and they probably could use some par boiling.

Does the cottage cheese change texture a bit? My husband doesn't like cottage cheese so he probably won't like this recipe?

I don't like cottage cheese either but it's good here. If you like you probably could sub ricotta.
If for some reason I'm eating cottage cheese straight up I need to put sugar in it.

Someone else suggested ricotta as a substitute when I first posted the recipe and I bet it would be awesome as well. I love cottage cheese myself. My Mom used to just spread it on toast for a quick breakfast. Yum! Thanks for posting the pic on my recipe page Points!

I didn't know what to expect from this! Mainly what the texture would be like. Was it going to be creamy or set up firm or what? LOL. Well it was slightly creamy and set up just enough to hold it's shape as you can tell from my pic. SO TASTY! I used TJ's Everyday Seasoning, and just kind of eyeballed the amount since it's a grinder and used white cheddar cheese. I ate quite a big helping :) Got to use my first broccoli from my garden...and it was good! Thanks Janet :) :)

Oh and you cannot tell that it's cottage cheese that is in here AT ALL. I was even worried that maybe you could still see the curds, but you can't. I did buy small curd cottage cheese though...

Very pleased you enjoyed the Broccoli casserole Michelle. Nice on the white cheddar. Wow on getting harvests out of your garden in January. That's crazy talk to a Canadian. :)
    Thanks Marie. :)

Thanks Marie!! You definitely should give this a try soon!
We plant our fall garden in October and broccoli seems to always be the fastest growing and the first ready besides lettuce. Cauliflower and cabbage still need a good 2 months until they are ready!

I like cottage cheese but I don't buy very often but when I do I certainly will give this a whirl. If my HB doesn't notice it in this I will let you know:) Super yummy pics from both of you! Michelle I am very envious of your garden the only thing I see in my garden right now is snow:)

This might be a good opportunity to try your hand at making your own cottage cheese and ricotta. I have some recipes that will walk you through the procedure. It's really simple.
