    I don't believe I have ever used biscuit mix for breading. Pretty sure not. This really came out nice and crispy. Not sure if it was the biscuit mix or the combination of it with the buttermilk or not, but it was crispier than flour. I usually make a recipe as written except I wanted to have a nice dinner tonight (back to work tomorrow!) and knew that salt wouldn't be enough seasoning for me. Guess I put my taste buds before IMI tonight. Sorry, gang. It won't happen again. :-P

    I made one other buttermilk based recipe today. I will report back tomorrow after the gang at work (hopefully) inhales it.

    I bookmarked this. Looks sublime. I have a box of Bisquik in the pantry from another recipe a while ago. Will use Tina's sub for buttermilk. Your potatoes look like a perfect side as well.

    Thank you, ladies! I used Bisquick but I don't think it has lard in it. It does have leavening stuff in it. Maybe that is what worked. I'm not certain, but it was crispy!

    Substitution for it is:
    One cup of Bisquick can be substituted by a mixture of one cup of flour, 1½ teaspoons of baking powder, ½ teaspoon of salt, and 2 1/2 tablespoons of oil or melted butter (or, better, by cutting in 2 1/2 tbsp Crisco or lard).
