Caramelized Onion Jam

    By Jimrug1...I just made this tonight! Let me put this in your words Jim...Mann, this is good!!! I made it as written except I didn't use clarified butter because I didn't have any and I didn't have time to make some. I also didn't have dark rum so I used regular rum. This still worked out beautifully! I was so tempted to add more rum and more sugar but I didn't! It is perfect as written! I wish I would of tripled the batch...it cooks down to a small bowl full, as you can see in my pic! I'll never buy onion dip again...this is so much better than that! Now I know what Lunasea was talking about!

    If you didn't use clarified butter, did you just put in the same amount of regular butter?

    Otter...I used the same amount of regular butter. We spread this stuff on cheddar cheese also! I was thinking of also spreading it on puff pastry to serve as an ore derve. Yes Juels, it would be great on meats! I just know I'll have to triple the batch next time!

    I made this last night to serve as a side for roasted chicken, baked potato, and a salad. It was really good with the chicken! I think it would be great with pork tenderloin as well.

    LOL! Juels! Thats exactly what I did last night! I made it again but this time a made a double batch...3 of us were eating it! LOL! I have about 1/4 leftover...so thats what I'll be eating while Hell's Kitchen is on!!! You must be a mind reader!

    By the way...if you make a double batch of this amazing spread, you'll have to also double the cook time! So be ready to be in front of the skillet for a while! It' s SO worth it! Oh...and this stuff even tastes awesome when its warm!!!

I don't know where she got the recipe from but she is the one I got it from.... ;-)~~
