Recipe by Chuckieb: Chicken Parmigiano I like everything about this recipe. Great flavor. Of course I had to cut some corners with my frugal ways. Made my own fresh tomato sauce using the sauce portion of : Angel Hair Pasta With Fresh Tomato Sauce Sauce was a little watery being from fresh tomatoes so I simmered for 15 more minutes to thicken it up. Used Asiago cheese instead of Parmesan. It's what what was in the fridge. Still turned out well. Tried baking with the convection oven. Dropped the temp to 300F and kept the time at 45 minutes. I know DetroitTokyo reviewed this recipe but couldn't find it in IMI. Also didn't cut the breasts horizontally. Just cut them in half. They cooked through anyway. Breading was just enough to get the job done. I like that. Had to use some ground up breakfast cereal for the bread crumbs (honey nut cheerios). Doubled the recipe. Fit well in a 9x13 casserole dish. Cut up a couple of chickens to get the breast material. Have enough thighs in the freezer now to start sniffing around for a thigh recipe.

Well I finally got around to making this last night and I am so glad I did! It was just delicious...I couldn't believe all the flavor in the sauce with just a few ingredients, the garlic & thyme really made it special:) I used Panko instead or regular bread crumbs because that is what I had, and the chicken turned out perfect. I also sliced the Mozzerella as opposed to grating it, worked well..Thanks Janet, I will be making this often:) Oh! I had fresh Italian parsley to garnish with and forgot to add it:( I also added a pic:)
Yummy! I made just a few small changes. I only had 1 14.5 oz can whole tomatoes so I subbed another 14.5 oz can dice tomatoes. Used a potato masher to smush up everything. Forgot to add the parsley before baking so I just sprinkled it on at the end. This is an amazing simple recipe!!! Thanks Chuckie!!
Really tickled you liked it ML2C! No diff between the whole tomatoes and the diced really. Same as to when you add the parsley. I was just in my early '20's when I was given this recipe by my boss's wife at the time, Helen Forcellini. I have made it hundreds of times since then I guess. Always yummy. Good comfort food. I made up the sauce part of this tonight and am thawing out some chicken breasts for the rest tomorrow. This sauce is absolutely wonderful. I didn't cut the sauce recipe in half so I have plenty. I used a can of Italian stewed tomatoes and a can of diced tomatoes. All else I did as per spec. I will be back tomorrow to report on the chicken part of things but I did add a picture of my dinner tonight to the gallery.
