Ingredients

How to make it

  • In 2 tbsp. of hot oil, sauté garlic and chopped onion until soft and golden. Add tomatoes, salt and pepper. Break up tomatoes and simmer uncovered for 10 minutes. Add tomato sauce and thyme and simmer uncovered for another 20 minutes.
  • Beat egg. Combine crumbs and 1/2 cup of the Parmesan cheese. Dip chicken into the egg and then into the crumb mixture. Sauté in 1 tbsp. olive oil until golden on both sides. Set slices in a baking dish. Heat oven to 350F. Pour 2/3 of the tomato mixture over the chicken. Sprinkle the mozzarella cheese on top and then spoon on the rest of the tomato mixture. Sprinkle with the 1/3 cup of Parmesan and garnish with Oregano and/or Parsley. Bake uncovered 30-45 minutes until hot and bubbling.

    My first time having chicken parmgiano! And, wow, is it ever good. I had two breasts so I cut the amount of bread crumbs and initial parmesan in half. I had so much left over after coating the breasts that I didn't want to waste it. So, I used the mixture as the final parmesan topping. Probably not what you had in mind, but I did like it and I didn't waste my crumbs and cheese. I will have the leftover breast tomorrow. Good stuff! 2/20/13

    I've split this up a bit because it seemed like it would take awhile on a weeknight-workday. I made the sauce tonight and threw some shrimp I wanted to use up in the boiling spaghetti. This sauce is wonderful! My first time cooking a sauce with tomatoes. I've only used tomato sauce in the past. I love how it thickened up. I added a picture and will be back tomorrow with the chicken part. Stay tuned. :-) 2/19/13

    Made this last night and I am so glad I did! I couldn't believe how delicious the sauce was with just a few ingredients, so flavorful. The combination of garlic & thyme really made it special..I used Panko, because that is what I had, that turned out well:) Also sliced the mozzerella as opposed to grating it... Very nice recipe Janet, I will be making again (and again!) More in Chicken Parmigiano OH, I had fresh Italian parsley to garnish this with and forgot to add it:(

    Janet, this is wonderful!! I made it especially while my sister is in town b/c she loves this dish & this was my first try at it. She enjoyed it so much, as did my beau, our friend - and me of course! My breasts didn't seem very large so I didn't slice them in half. I opted for oregano for the garnish. I left it in the oven about 5 minutes extra by accident so it looks a little more brown than your photo but that didn't affect the flavor. Thanks so much for this excellent recipe!

    I would call this a kind of Chicken Cacciatore but by any name it sounds delicious. I do a similar dish a different way. Does that make sense? O well, I need to try this. Please do tell how you wear out a Dutch oven. I got my old cast iron job from my Granny some 30 years ago and only the lord knows how long she had it. RJ
