Chili Cornbread Casserole by modelsmom
was delicious. I subbed turkey for the ground beef and used a double batch of Jiffy mix for the topping as instructed in the recipe. It was a nice thick layer. I did add a bit of chipotle powder 1/2 tsp, cumin 1/2 tsp and a squirt of catsup (probably 2 tbsp.) to add a tiny bit of sweetness to the ground turkey. Fred loved it. The cornbread was wonderful. I don't have a picture of the dish but I definitely recommend it. Easy and yummy. Oh, it did have to bake a good 10 minutes longer to get the cornbread cooked all the way through.

Quite delicious. Could have used some salt in the chili part.
Used my own Sweet Cornbread recipe.
Backed off on the chili amount. Used 1 Tbsp chili powder and 1 Tbsp Ancho Chile Powder.
Could have used more chili powder but I was satisfied with the heat level.

Mother turned her nose way up at this dish. She likes her cornbread straight up so she can soak it in milk. But I gave her a dish anyway. Now she loves it.

That looks fantastic, pso! Great pictures. Its also good to know you can use a cornbread recipe for the top. Now I'm craving cornbread casserole. I was going to make meatloaf today but now I don't know!
