DT's Egg Rolls

    I've always meant to try my hand at making Egg Rolls but always thought they'd be too complicated and fussy. I finally decided to give it a whirl yesterday and tried Dahlia's
    Egg Rolls
    I had a blast! They were really easy to make up. I was most impressed! I hadn't planned on making this recipe so I had to work with what I had on hand. I didn't bother with the chicken and I'm not a fan of celery. Didn't use the mushrooms nor the cabbage! LOL! But I adjusted the other ingredients accordingly and even added in a bit of fresh coriander and they were very delicious! Quite enjoyed the sesame oil and rice wine vinegar additions. I baked these as opposed to frying them, just to try get a healthier snack. They looked nice but they weren't that crunchy. I wish I could figure out how to get that wrapper crisper by baking them. If anyone has any suggestions please share. But I'd make them again in a second. I did see in both a recipe of Keni's

    that they used a bag of Coleslaw mix as opposed to slicing cabbage and I like that idea. Also now just saw in Laurie's recipe that she turns hers after ten minutes and maybe that helps with the crunchiness factor.
    Anyway....I am no longer in fear of making homemade egg rolls. They were quick, easy, yummy and I looked like I'd done a lot of work. :) Met with thumbs up from all family members! Thank you Dahlia for a great recipe! :)

    Maybe if you rubbed them with an egg wash right before baking that might help make them crunchier?

    That's not a bad idea ML2C! I had brushed the tops of them with peanut oil and used margarine to grease my cookie sheet.

    Those look sooo good!! I love egg rolls. I've baked mine before and I sprayed them with cooking spray. But, I can't remember if they were crunchy or not!! :-D Turning them probably would help, too.
