    Happy Hour Mushrooms

    Loved the name of these and am always up for trying out new stuffed mushroom recipes, but I'm afraid this one fell short. I could have been at fault as I subbed swiss cheese for the Monterey Jack and I also was too lazy to dig out crackers so I subbed bread crumbs which may have resulted in less crunch.
    I couldn't really taste the wine or the soy sauce and I think it could have used more garlic as well.
    I've made two other stuffed mushroom recipes from GR and way prefer those.
    Parmsean Garlic Buttered Stuffed Mushrooms
    and
    Olive Stuffed Mushrooms
    Lot's more to try as well.

    Janet, It is a yummy looking pic! I see what you mean when I looked at the ingredients it seemed to be lacking something like more garlic at least for sure. Plus maybe some other spice like oregano to perk it up. Are you going to put the pic in the recipe post as well as in here? Thanks for letting us know your experience with this post:)

    Ya, oregano probably would have helped alright Joce. Oh well...not a biggie. I just went and put the pic up. Thanks for the reminder. I always do hate to say anything negative about other people's recipes because of course taste is just a matter of opinion and what tastes super yummy to one person doesn't necessarily mean it tastes good to someone else, and....there's no right or wrong.

    Broiled them at 550F for 3 minutes. Maybe dropping the temp to 450F would have let me broil them for the full 5 minutes.
    Stuffing was fully moist using 3 Tablespoons wine.
    Sprinkled some extra cracker crumbs over the top of the 'shrooms. That is the dark pieces on top in my pic.

There was no texture per se. I just didn't like it. I only added 2 not 3 tbsp. of wine. I found the cooking time perfect as per the recipe instructions. It's nice you liked the recipe Points. As I say, people like different things. Thanks about the link back. I just got rid of it all together.

    Agreed, the stuffing was mooshy, even with the crackers. Thought to go with the larger liquid amount because of the flavor trouble you had. I'd go with the lesser liquid amounts and nix the seasoning if made again. I bow to your expertise in making happy hour snacks. :)
    I never know what temp to use on my broiler as the recipes usually never spec it out and my default broiler temp is 550F, but programmable.

    I've always defaulted to 500 for broil, unless otherwise specified. I never thought about it, though... I dunno why I always assumed it was 500.
