How to make it

  • Preheat oven to 400 degrees.
  • In small bowl, mix olives, Parmesan cheese, breadcrumbs, parsley and rosemary. Set aside.
  • Wipe mushrooms clean with kitchen towel or brush (do not run under water)
  • Trim mushrooms stems, separate from caps and finely chop.
  • Warm 3 tablespoons oil in large skillet over med heat. Add onion and garlic and sauté until soft, about 2 minutes.
  • Add chopped mushroom stems and sauté 1 minute.
  • Add olive, cheese breadcrumbs and herb mixture.
  • Salt and pepper to taste.
  • Pile mixture into mushroom caps.
  • Arrange on greased baking sheet.
  • Drizzle with remaining oil.
  • Cover lightly with foil and bake for 15 minutes.
  • Remove foil and bake another 5-7 minutes longer or until golden brown.
  • Serve hot

    These look so good, it's just that I'm not a green or kalamata olive fan -too salty for me, only like the black ones. But I could SO make 'em with those. Haven't had stuffed mushrooms in a while. They're a Fall/Winter thing mostly for me. Looking forward to making them.

    Oh WOW! We LOVE stuffed mushrooms, and I thought I'd made them every way possible! NOT! I can't wait to give these a try. I'm our family's designated "appetizer lady" so this just might be a keeper for the next family event!
