Sparow64's Olive Stuffed Mushrooms!

We were talking about Olives on ODD and Lori posted a few wonderful Olive recipes yesterday, this being one of them.
Olive Stuffed Mushrooms
It sounded so good that on the way home last night I popped into the grocery store to pick up the ingredients and while I was making dinner I whipped these up on the side and served them for a late night snack for my hubby and son. They were met with appreciative noises and were gone in minutes. Excellent recipe! For anyone who is an Olive lover, this is a must try recipe!
The stuffing mixture actually makes quite a bit and I stuffed 16 mushrooms and still had a bit of stuffing leftover (which I refrigerated and will make more at some point this weekend). I'll bet it'll make another 8 anyway.

I forgot about this recipe and I know how much we loved them....perfect little nibble for tomorrow's game. Fred doesn't even like olives and yet he loved these stuffed mushrooms......definitely going to get the ingredients for our game tomorrow. Yahoo. yummy.

Made these this weekend, too.... tasty, different mushroom. We don't care for rosemary, much, so I did sub fresh thyme, but that's only a taste thing, not a reflection of the recipe. :)
