    Marinated Tomato Muenster Sandwich With Pesto By: GKwillow
    This is delicious just like I thought it would be! It was my first time using the mayo method for a grilled cheese and that was a little different for me. I think I like using all butter more, but then again I'm a butterton. I didn't have any muenster so I used a combination of yogurt cheese which is mild in flavor and smoked cheddar. The marinated tomatoes are just lovely and everything works nicely together.

    That looks so good. I love Roma tomatoes and wish mine would get ripe. Things are slow this year, for some reason. I'd probably just use butter, too, DT. For some reason, the thought of hot mayonnaise has never appealed to me. That's a great picture!

    I think the mayo trick makes it brown up nicely but I always cook my grilled cheese sandwiches (and variations) low and slow, covered. I do it b/c my electric stovetop seems to get so hot and make it brown quickly without giving the cheese a chance to melt through. I know what you mean about hot mayo, Frankieanne, but it's not like that. It's just a small layer and it gets cooked through right away. I guess you can think of it kind of like French toast but with much less egg? I don't know. Don't mind me, now I'm rambling.

    Anyway, I'm glad I could make you all hungry and highly suggest trying this sandwich!!!!

    ohhh..this sounds great! I have grilled sandwiches with mayo on the inside of the bread,and it always makes the bread too thin/soggy as it cooks...never thought of putting it on the outside!!     Made this for lunch today and will certainly make it again. I should have shook the oil and vinegar mixture off the tomatoes just a bit more before I added them to the sandwich as I did have a couple of soft spots. The mayo on the outside was fine and I didn't notice it at all really. I used Herbed Havarti as opposed to Muenster and I only used one slice per sandwich and it was plenty cheesy enough. The pesto was lovely. Very yummy sandwich.

    Yay I finally tried this!! Liked the mayo fried bread too! The tomatoes really soak up a ton of balsamic flavor in that short amount of time....and I used my raspberry balsamic. Yes...I know my picture is sideways, but I just got a new phone (with a better camera :) and I'm still figuring it out lol! LOVE muenster once again!
