Marinated Tomato-Muenster Sandwich With Pesto

Was looking for something a little more than the "usual" grilled cheese. Tomato and basil are a dynamic duo...muenster cheese is a creamy smooth white cheese that melts super well.

Ingredients

2 slices bread (your choice) shopping list
2 slices muenster cheese shopping list
1 medium roma tomato, sliced shopping list
1 tsp balsamic vinegar shopping list
1 tsp olive oil shopping list
pesto shopping list
mayonnaise shopping list
butter shopping list

How to make it

Whisk oil and vinegar in small bowl - add sliced tomato and turn to coat evenly with the marinade.
Place 1 slice cheese on each slice of bread. Spread one with pesto and the other with mayo.
Remove tomato slices from marinade, allowing excess to drip off. Place on one of the bread slices and close up sandwich.
Melt a tiny amount of butter in a skillet and place sandwich in the skillet. Cover the bread side facing up with a thin spread of mayo.
Grill until golden, then flip to grill the other side.

Made this for lunch today and will add it to our regular rotation. Very flavourful sandwich. A stepped up grilled cheese and tomato. I couldn't find Muenster slices so used Herbed Havarti. Just used one slice on each sandwich and it was plenty cheesy. Thanks for sharing!

This is delicious just like I thought it would be! It was my first time using the mayo method for a grilled cheese and that was a little different for me. I didn't have any muenster so I used a combination of yogurt cheese which is mild in flavor and smoked cheddar. The marinated tomatoes are just lovely and everything works nicely together.
