    Mediterranean Salad

    This was good, fresh tasting and all. I gave it 4 stars, because I didn't "love" it. There were about 4-5 servings, the recipe states it serves 8..I didn't add a teaspoon of salt, maybe 1/2 teaspoon..the Feta was salty enough for our taste. I think it would be good without the cottage cheese as well..just mix the spinach with the tomato and herb mixture, the pita chips (I used whole wheat) added a nice touch:) I would like to know if anyone else makes this to see what they think, because I do love the ingredients, but felt like it could have been just a bit better...

    Michelle, your homemade crackers would be perfect with this:) You don't have to make this sweetie...unless you want to..just wondering is anyone thought the same as I did:)

    Janet, I was wondering the same thing! Kalamata olives would have really added to this dish:)

    I thought so too..cottage cheese just DIDN'T work for me..I wanted to make it as close to Chefmeow's recipe..even though I would have done a few things differently..since she mentioned how great it was..you just never really know until you try it I guess.
