    I've never had turkey meatloaf before. This is my first. I was expecting it to be dry, but this wasn't. I used bread crumbs as I didn't have ground oatmeal, which (truthfully) I haven't heard of! :) A bit more mustard on top wouldn't hurt this at all.
    I'm looking forward to trying this cold on a sandwich tomorrow. Very delicious!

    My history too is not a love affair with turkey in meatloaf. More appropriately named mushloaf. I like the loaf to stand on its own and firm enough for sandwiches the next day. I like meatloaf. No negative stigma here. It's the body of the loaf the ground turkey makes.
    I'm thinking maybe I can take some turkey pieces, cut them in small cubes and freeze for a few minutes to firm up the flesh, then pulse grind them in a food processor to make my own ground turkey. Maybe then the loaf will stand firmer.
    Take regular rolled oats and pulse grind them in a food processor to make ground oatmeal. Quick oats are just rolled oats that are cut up a little in smaller pieces.

    This was pretty firm, pso. I was surprised. I'm not really a ground turkey fan either. I let the crumbs soak in the milk for about 20 minutes. I think maybe that helped make a firm loaf. It was firm enough for sandwiches.
