New York Strip Steaks With Herb Butter

    Of course I loved this, it's steak and butter, what's not to like!!? The only herb I currently have growing in my garden is rosemary, so I used that, although tarragon would have been great, as well as thyme :) At the last minute I realized I was out of charcoal (darnit!!!) so I had to pan fry these. I grill better than I pan fry steaks, so mine came out to about a MR-M, but my goal was MR. Very good flavor in the butter, nice zing from the lemon zest!

    A high heat IMHO produces a tough steak. Lo and slo is the way to go for a tender steak no matter how well or rare you prefer your steak.
    Keep that temp probe handy for more precise control. A high heat sear at the end will give it the grill marks.

    I agree on low and slow for certain cuts, but for a good cut like this I really think that if you get it off fast enough you will have a nice tender piece of steak. This was really tender but just a tad over for me. I got these on sale for a great deal, so I still have another pack in the freezer to try again :)
    Thanks Diz, meat is hard to photograph, I think sliced meat looks better in a photo than just one big hunk, but I thought the butter would make the photo look better, plus I thought I had overcooked my steak more than I had and didn't want a well done steak slice in my photo!
