Notyourmomma's Red Bleu Dressing

When I was a wee lass of 8 I was over at my best friend's house after school. There was a bunch of us there and no parental guidance and so we decided to play a game of Dare involving food. Someone would volunteer to be the 'taster' and then we would 'dare' them to eat whatever food item we came across in the pantry and the fridge. It started off innocently enough as all games do, but as things got going, things took a downturn, as things also often do. :)
Benny Cott was younger than us and probably about 6 at the time. A brave 6 though and of course he was eager to show off to the big kids and so he became the main 'taster' and we went through all manner of items to see if he'd truly eat it. A tbsp. of molasses, a small glass of vinegar, a palmful of ground coffee, you get the picture.
And Benny just came at it. But his stomach wasn't as brave as his head told him he was and when we dared him to eat a chunk of Bleu cheese (horrors to a young crowd) from the refrigerator he did....but it didn't stay down.
I've thought of Benny Cott many times over the years and hope that he became a successful man who forgave the kids that instigated that game so many years ago and....I've never ever eaten Bleu Cheese. Ever. Because of that.
    Until yesterday. :)
I got up my courage and tried Tina's
    Red Bleu Cheese Salad Dressing
A very simple salad dressing but one that really elevates a regular ole salad. Tina says she finds it best over fresh iceburg wedges but I'm afraid I'm an iceburg snob and can't stand the stuff. So I just shredded up some nice fresh leaf lettuce and served it over that. Having never tried Bleu cheese before I had no idea what to expect and as nervous as I was trying it, I was incredulous to find out how absolutely delicious it turned out to be!
I would describe it as a creamy parmesan flavour. I bought a package of crumbled bleu cheese which Tina said of course would make the task even easier. With there being only two of us eating dinner I just mixed 1/2 cup of the Catalina dressing with maybe 1/4 cup (I eyeballed it to look like the amount in Tina's picture) of bleu cheese and I didn't even have it sitting for a few hours, maybe an hour and a half. Wow. What a revelation.
Now I'm after more recipes with Bleu cheese. Sure bet it tastes awesome with chicken.
Thanks Tina, for getting me to finally try Bleu Cheese. :) I adore it.

Funny (and kinda gross) story lol! I like bleu cheese in small amounts...as well as certain strong cheeses. This looks so good!

It also goes well on steak! Here's a really good recipe I've made a couple times... Grilled Ribeye Steak With Onion Blue Cheese Sauce
