Provencal Tomato And Red Pepper Soup

    I was making a big salad tonight topped with chicken and wanted a soup to go along with it (I was extra hungry). I had just gotten a great deal on a bucket of huge tomatoes, so why not make tomato soup?! This recipe popped up in my recipe box when I typed in tomatoes, so I went with it. It was delicious! The red pepper gives more of a depth to the soup than just a regular tomato soup. The ONLY change I made was no shallots! Had to substitute boring yellow onion :) Did not need any sugar for my soup. I left my soup a tiny bit chunky. Yummy stuff Janet!

    That is such a pretty picture. I never heard of adding red pepper to tomatoes to make soup! Sounds like the perfect soup to go with your salad.

    Tickled you liked the recipe Michelle. It used to be my son's favourite. I didn't get around to making it this summer and pretty soon the fresh tomatoes will all be done. I'm sure the yellow onion did just fine.

    Thanks Marie!! The red pepper does add another level to the soup! Frankie, I can't think of how many times on a cold night I've thought of tomato soup, but then immediately thought "Oh, but the tomatoes suck right now!" LOL! Guess there's always canned tomatoes!

    Yes it does have a nice warm flavor. I always thought bell peppers as more of a sweet flavoring.
    Didn't add any sugar, and forgot to take out the bay leaf. Guess it got ground up with the immersion blender.

    Finishing this dish off today. Made 4 servings of 5 quarter cup ladles. So I probably could have made 6 servings out of it if I were less hungry. And for some reason this soup really made my blood sugar level spike.
