Roasted Beet Hummus by Turtle66

This was a huge hit at the Easter gathering. Not a drop was left. My brother-in-law who hates beets was piling it on sandwich rolls after the celery was all gone.
I made two changes. I didn't have lemons so I used the limes I had on hand. Also I'm very fond of the taste of sesame so I put in a teaspoon of sesame oil in addition to the olive oil. Big hit and I'll be making it again.

I have made it since and used some canned spiced beets which gave it a fun flavor twist.
