    Recipe by Mommyluvs2cook: Sausage And Greens Egg Bake
    A good recipe. Lots of flavor. Used one bundle collards subbed for kale because that's what was in the fridge. Steamed the greens instead of saute just to save some time.
    Plenty of seasoning in the sausage so don't go crazy with the seasonings.
    I used Italian mild sausage (1 1/4lb).
    With the introduction of the larger sausage, thought I'd go up to a 9x9 dish. There was plenty of room, so an 8by would have been ok.
    My casserole dish had ribs in the bottom, so the individual serving did not come out of the dish in one piece.
    This goes together quick.

    Looks like a good recipe. I would probably use Italian sausage too Points as it is my favorite. Nice photo too.
    I'm just getting into kale because it keeps for so long. Nice combo of stuff there.

I used Spinach Feta Chicken Sausages, 4 of them, a 12 oz package, they were precooked. I didn't have Greek seasoning so I winged it..used dried oregano, thyme, basil, garlic & onion..didn't have any mint. I baked for 35 minutes after checking at 30..the eggs weren't quite done in the middle at 30 minutes, 5 extra was perfect! Oh, the Feta really added so much flavor! Thank you Michelle for sharing this, I'll be making this often:-) Added my pic to the recipe..

    I use Cavender's all purpose Greek seasoning mix until it's all used up.
    (First two ingredients are salt and pepper.)
    Then I'll make my own. Can't be that hard with a little 'net search.
