Spanish Rice

    A new taste in rice for me. Used Fresh Tomato Salsa instead of the salsa recommended by the author. A money $aving thing. Used juice of a lime plus the skin zested. Gave the dish a lot of lime flavor. Couldn't find any red chili peppers in my little town so I latch on to an Anaheim chili sans seeds and veins.
    Hard to rate this dish because I didn't use the salsa recommended.

    Looks like "If You Dare Salsa" is an upstart company seated in the authors home town and is available to limited stores. But it can be purchased on-line. Here is a salsa recipe at GR: Do You Dare Salsa that would even make Keni's tongue wag and forehead bead up.

    That Do You Dare sure makes a lot of salsa. I'd have to really cut it down. Especially the first time out not knowing if I'd even like it or could take the heat.
