    Spiced Vidalia Onion Bake
    After seeing this posted in the Memorial Day 2011 thread by Notyourmomma I just had to make it. Have a guy here that is a BIG fan of any kind of onion and Vidalia onions are being sold by the bag right now and I have been cooking anything I can with them. The onion rings were delicious. :)
    This recipe 'rocks' and is definitely a second helping go back for more kinda thing. The mellow heat is just barely there from the 1 can of chilies and that's all right by me. Maybe a second can if you want more? I used an extra sharp cheddar cheese as that's what I had a block of in the fridge. I'd imagine just about any kind would work? My cracker topping was leftover crackers (from Christmas lol) that no one was wanting to snack on but became a delicious crunchy topping when mixed with the butter and parmesan cheese. I 'baked' mine on the grill as suggested in the Memorial Day thread and it came out perfect. I served them with Grilled Italian Chops and a foil packet of baby white potatoes-sliced and yes I even put a can of green beans in a foil packet. :D The combo was delicious! Definitely a keeper recipe and will make again this coming holiday to go with my ribs and tri-tip. I just don't see this one lasting till then...

    That looks and sounds fantastic Ang! Love your picture! I bet the extra old cheddar would have been perfect. Had this bookmarked before but will have to make a point of heading to the Grocery store to get some Vidalia's.
