Sweet and Smoky Baked Beans

    Good baked bean recipe. I used bacon instead of the salt pork. Thought it was going to be too soupy in the bottom of the pot but as it set while I was finishing up other things in the kitchen, what liquid was in the bottom soaked into the beans.

    I would like to double this recipe again.

    Only oddity I found with the recipe is it calls for 2 1/2 cups of dry beans. A standard pound pack of beans is 2 cups. I'm not about to open up another bag of beans for that extra half cup. It's just neater that way. But maybe that is why I had just a little juice left in the bottom of the pot.

    Good flavor. Sweet and Smokey. Definitely use the extra liquid smoke. Beans are fully cooked after the 6 hour bake.

    These were pretty good. My dad thought they were bit sweet and my sister didn't like the texture. She thought they needed more liquid. I made them as written and used the 2.5 cups of beans. I didn't have a small onion so I cut one in half and used a wooden skewer to keep it in one piece. I added a picture to the recipe.

    So, would you suggest using more water when making this? I want to try my hand at a baked bean recipe this Fall/Winter (when it's not so darn hot)..just need to find the perfect recipe:)
