Thai Chicken Burgers With Spicy Peanut Slaw

    My new obsession is chicken burgers, can you tell? This was another good one! The patties cooked up nicely, holding their shape well. Used almond meal in place of bread crumbs with success once again. Cooked them in my cast iron grill pan. Tasted great! Made up the slaw a couple hours earlier. We don't have peanut butter in the house any more, only almond butter so used that. I used the optional coconut milk and the dressing was really thick. Tasted good but the slaw was a little dry. Maybe more coconut milk, or oil? Overall a well liked dish though :) No buns here!

    Why no peanut butter?
    If it's all the added ingredients in the peanut butter, know that you can grind your own peanut butter with some dwell time in the food processor. Fresh homemade peanut butter, YUM.

    Well for one thing I have never really been a fan of peanuts or peanut butter myself. Plus when we started doing Paleo, peanuts are a legume, not a nut, and there are no legumes allowed. I have since then brought beans back into our diet, just because they don't mess with our stomach and they do have health values. BUT Briauna had announced that she prefers almond butter over peanut butter, crazy! Caiden doesn't do any nut butters, doesn't like the stick to your mouth texture at all! You should see the faces he makes when he tries it lol :) So we just stick with almond butter! I make it myself, it's probably the same process as peanut butter.

    Thanks ladies! I'm so into chicken burgers right now it's crazy! I think I'm finally going to give in and make my own ground chicken!

    How come legumes aren't allowed but nuts are? I thought Paleo was something like "food that cavemen ate" or something like that. Wouldn't they have eaten beans and such? If they had them, I guess. My ignorance is showing. :-P

    I'm not sure what cavemen ate lol, but yes it's like that! Paleo is all about eating foods that don't mess with your body and some people have an issue with beans messing with their stomach. It's all about eating stuff you body can digest well. A good example is Michael...if he eats too many beans his stomach will be so messed up the next day (not fun for any of us) ...so I do try and limit them.

    It takes a while for the right digestive enzymes for beans to build up in the body's system. A constant diet of a small portion of beans will do the trick. Once established there will not be any more side effects from eating beans.
    It happens with lots of foods. The right enzymes have to be present for complete digestion.
    I notice it when eating from the smorgasbord of food in 'Vegas. All that strange food makes my close friends not want to be so close for a couple of days.

    That's good to know Points! We eat small amounts of beans maybe once a week or 2? I'm guessing that wouldn't be enough to lessen the side effects. Lol on your friends not wanting to be close, that's what we are like with Michael after he eats a big bowl of beans :P
