How to make it

  • For Cole Slaw:
  • Combine everything except cole slaw mix, cucumbers, peanuts and cilantro for garnish in a blender. Blend until smooth (you can drizzle oil in while processing if you like - I forgot to and it still worked fine!)
  • Pour over slaw and cucumbers and toss to coat. (You can refrigerate if making ahead)
  • Garnish with additional cilantro and peanuts before serving.
  • For Burgers:
  • Combine everything together and shape into patties.
  • Preheat oiled grill or pan over medium-high heat; place burgers on grill and reduce heat to medium. Cook about 3-4 minutes each side, or until done.
  • Place burgers on buns. If desired, top with some of the spicy peanut slaw as a garnish.

    Just made this tonight, and it was fantastic. The chicken doesn't cook down like ground beef does, and allows all the flavor of the peanut and ginger to come through. Both the slaw and the burgers were great.
