Thai Chicken Burgers With Spicy Peanut Slaw

- BURGERS: shopping list
- 1 1/2 lb ground chicken shopping list
- 1/2 cup panko or whole wheat bread crumbs shopping list
- 1 tbsp lime juice shopping list
- 1 tbsp chopped cilantro shopping list
- 2 tsp. fresh ginger, grated shopping list
- salt & pepper shopping list
- 1 tsp hot sauce (like Sriracha) shopping list
- 1 clove garlic, minced shopping list
- 1/2 cup chopped red bell pepper shopping list
- 4 whole wheat buns shopping list
- COLE SLAW: shopping list
- 1 bag coleslaw mix (or 4 or 5 cups grated cabbage/carrot) shopping list
- 1 cucumber, peeled seeded and coarsely grated shopping list
- 1 tbsp cilantro, chopped shopping list
- 1/4 cup natural peanut butter shopping list
- 1/4 cup rice vinegar shopping list
- 2 tbsp lime juice shopping list
- 1 clove garlic, chopped shopping list
- 1 tbsp fresh ginger, minced shopping list
- 1 tbsp hot sauce (or to taste) shopping list
- 1 tbsp honey shopping list
- 1 tsp toasted sesame oil shopping list
- 1/4 cup peanut oil shopping list
- Dash sot sauce shopping list
- salt & pepper shopping list
- 1/4 cup coconut milk (optional) shopping list
- 1/2 cup peanuts, chopped shopping list
- cilantro for garnish shopping list
How to make it
- For Cole Slaw:
- Combine everything except cole slaw mix, cucumbers, peanuts and cilantro for garnish in a blender. Blend until smooth (you can drizzle oil in while processing if you like - I forgot to and it still worked fine!)
- Pour over slaw and cucumbers and toss to coat. (You can refrigerate if making ahead)
- Garnish with additional cilantro and peanuts before serving.
- For Burgers:
- Combine everything together and shape into patties.
- Preheat oiled grill or pan over medium-high heat; place burgers on grill and reduce heat to medium. Cook about 3-4 minutes each side, or until done.
- Place burgers on buns. If desired, top with some of the spicy peanut slaw as a garnish.

Just made this tonight, and it was fantastic. The chicken doesn't cook down like ground beef does, and allows all the flavor of the peanut and ginger to come through. Both the slaw and the burgers were great.
