Twofer - Keni's Balsamic Garlic Asparagus and Roasted Sprout And Tater Mashup

  • duboo 10 years ago
I love to cook for my family, and anyone else that will eat my cooking, but I equally love my nights where I get to cook just for myself. Like tonight, this usually involves a ribeye and some sides. I like to use these nights to experiment with new flavors a bit, or have something the rest of the family doesn't care for. Keni's Balsamic Garlic Asparagus fit the bill for something my family probably wouldn't like, but I love. It has the bitterness I love from the vinegar and zing from the crushed peppers. My asparagus was puny, but it worked. I really like this dish and will make again on my "date with me" nights.

The second one was a home run all the way around. Keni's Roasted Sprout And Tater Mashup is a definite keeper. This one actually surprised me a bit. I had tried Brussels sprouts one time in the past and I wasn't wild about them. But in this, they blended in so perfect with the taters in such a mellow way, it was just fantastic. This is one I will definitely be making for my family in the very near future.

And here is a nice surprise for you playing along at home, in neither of these recipes did I have to make substitutions :)

Are you two wearing the same outfits, too? :)
That is one good looking dinner, Duboo! I've never thought of mashing Brussel sprouts! Makes sense as I have had cabbage in mashed potatoes. Nice idea.

Oh yea, of course I loved this one!!! My kiddos actually loved it too, and I was SO worried they wouldn't. Loved the grainy mustard in this, and I used milk instead of 1/2 and 1/2, which I thought was fine. It's fun mixing veggies into potatoes :) Don't leave out the bacon! Posted my pic.

These were some delicious asparagus! I already had the grill going for some steaks so I went ahead and threw these on as well instead of baking. Very good and don't skip the cheese! :) Added my pic.

That looks really good! I think the grill is a great idea for this. Asparagus is half way reasonable in price around here right now.
