Good Morning Monday!

    Good Morning Everyone! Up and at 'em early this morning. Getting a jump on the week. Coffee's brewing and I'm about to head down for my morning walk on the treadmill.
    Am having Cabbage rolls and Perogies for dinner this evening. An easy night after all my work yesterday!
    Picture today is of one of the stalls at our local Farmer's Market that I go to on a fairly regular basis. So nice to see the pumpkins and apples showing up.

    Tonight is leftover roast beef,mashed potatoes and probably asparagus.

    Today is leftover day with a lot of small amounts to give lots of choice - Cowboy Beans and Rice, Chimichuri Pork Casserole, Ratatouille Rice, Veggie-topped Tilapia and some refrigerator crescent rolls to bake to have hot with all of it. Anything still left after tonight, for the most part, will go to the dogs.

    Broke open a jar of canned pears we made last week to check the work. Pears were on the sweet side, not because of the pears but the sugar water they were packed in. Used a medium syrup. Next batch will be a light syrup. Think it is covering up the natural flavor of the pears. I was in a hurry to get the pears canned and worked them up as soon as they met the definition of ripe (yielding at the stem). Result is IMHO too much work to chew the pear flesh. My memory of pears out of the can is they crush to a pile of liquid with little pressure from the tongue, the liquid bursting from the pear shape. Remaining flesh having a soft almost grainy quality, definitely no chew factor.
    It's my first pear canning experience. Maybe I don't need to rush to can so quickly.

    Keni has a pear dessert posted I just might use with these pears. I have a used vanilla bean from making ice cream the other day. I read the beans can be used again by storing them in a little sugar. If it's OK with you, Keni, I'll try using the used bean.

    Made two tuna noodle casseroles yesterday because I wasn't sure how the size of the casserole would turn out but they did just fine in an 8x8 dish. Sooooooooo I have an extra casserole for today or maybe tomorrow.

    P7O, Keni's pear recipe looks so delicious! I've heard the same thing about reusing vanilla beans. Let us know how it all works out. Lucky you that you get to try it!

    Pat, is a buttercup squash similar to a butternut squash?

    Michele, I like your idea of a leftovers smorgasbord. I have leftover tortilla soup still and though it's lovely, there's only so much the two of us can eat. I'm thinking of dropping some of to my sister.

    Yesterday was quite the busy day for us. First, we went to the football game courtesy of some of my guy's associates. We were invited to a pre-game "rooftop" mixer, though our stadium is enclosed. Then, watched the game from a suite. It was my first pro football game and what a nice way to do it! Fun but we had to leave during the 4th quarter to get ready for our next event, which was a charity event raising funds for children's school uniforms. It was held at a local furniture store which was also unveiling their new modern line. There was fashion, live music, and to my surprise my sister was there performing belly dance! I know she does belly dancing gigs but this was a last minute opportunity for her so it was cool running into her that way. Of course, there was food! Saved the best for last... About 8 local restaurants showcased their food. The most memorable items were Chicken Tawook from a Lebanese place, Ahi Napoleon (seared tuna, avocado, marinated seaweed, drizzled w/a sweet sauce on crispy wonton), and Peanut Chicken with Rice Noodles. They also served champagne and an Apple Martini made with Butterscotch Schnapps & decorated with caramel on the inside of the glass. It was very nice!

    For dinner tonight I am going to try to make the shrimp scampi I've been talking about for days...

    Great pic, Janet! Fall is my favorite time of year!

    Had such a blast with the grandboys yesterday! Took them to the park. Jon, just turned two in June. He loves the slides. Everytime he'd slide down he'd say "That's very awsesome" and go back again! lol Think I got some good pics, but won't get to download them until tonight. He had a blast with the corn on the cob, too. That child had corn in his hair, his ear, allover his clothes, etc. And I didn't think to take a picture until we had him cleaned up. Wish I'd gotten one of that! Jesse had a blast, too. And the baby is 11 1/2 pounds now, he is growing so much. And just as bald as he can be. : )

    Leftovers for me tonight. It was after 10 when I got the downstairs and dishes cleaned up last night. Still have to take everything upstairs tonight. UGH. Maybe Bryan will take pitty on me since he's off today and it will be done when I get home! : )

    How could I forget, one of the places served sweet corn risotto with shrimp and micro basil, so delicious & made me say "micro basil is my new favorite basil" hehe..

    P7O - pears can be fickle. Sometimes it depends of the variety. I have canned a lot of pear and had them come out tough, fall apart, super sweet, not sweet enough. I always use a lite syrup - that was being diabetic - they aren't quite so bad for me! Going home to Houston this week and not lookling forward to the 90-100 degree weather with 95% humidity! UGH!
    DT - what a day yesterday! Sounded like a lot of fun. Love shrimp scampi. Post the recipe please.

    I bought Agave at Costco - got 2 bottles for the price of 1. What a deal Love it and it is so good for you compared to sugar and fructose.
    We had a turkey breast I baked last night with cornbread dressing and cranberry sauce. Tonight is hot turkey sandwiches! Yum - a family favorite.

Didn't have any Kaluaha so I subbed a pumpkin liquor and then did a cream cheese frosting drizzle. brought it to my friend robyn (speckadoo) she is recovering from a hip replacement.

    Tonight though will be a bit of sauteed flounder, radish onion salad and parsley butterd boiled potatoes.

    So I'm back and eyeing those Cowboy Beans and Rice that MBelisle is pointing out. Need to get some beans soaking. Maybe I'll make a good pot of rice instead of potatoes tonight. And Points it was TunaNuna Casserole for me yesterday. That is just a favorite that I hadn't had for a very long time.

    Otter - I'm like you - give me SQUASH! After seeing Janet's picture and Pat's recipe with balsamic - I'm ready. We have a U-Pick pumpkin farm that grows all kinds of squash along with at least 10 varieties of pumpkins. If it's not raining, might pay them a visit when I get back from Texas, Squash keep nicely for a good period of time in our garage.

    Had a couple of problems with step-moms accts today but think we are back on track.Nothing is ever easy.

    Took Becca to a health food store specializing in Gluten free products. man is that stuff expensive. We got a sm box of chicken tenders, a sm box of fish stix, a loaf of bread, a bag of pretzels and 3 chocolate chip cookies. It came to $27.00.
    We are having some problems finding GF bread. there are a ton out there but all contain nuts or are processed on /with nut facility. We found one (with the help of the clerk) but it is challah not regular white.

Green Hubbard squashes are soooo neat and I always want to buy a bunch this time of year just to decorate the house with never mind eat!

    You glorify me above my station Chuckieb. I haven't made phyllo dough yet. Don't have a flat surface large enough to stretch out the dough into sheets or I would be up to the challenge. Meanwhile mother has brought in some more pears and is peeling and quartering them. I don't have the luxury to experiment with phyllo. Need to look up pear dishes. So I'll shortcut my way through Keni's dish and look for some more.
