Ingredients
  • 1 cup very strong coffee
  • 1 3/4 cups honey
  • 4 extra large eggs
  • 4 tbsp. canola oil
  • 1 1/4 cups packed dark brown sugar
  • 3 1/2 cups unbleached flour
  • 1 Tbs. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves
  • 1/4 tsp. nutmeg
  • 1 cup whole or half candied or plain almonds ( I did not use )
  • 1 cup raisins ( Iused golden )

Directions
  1. Preheat oven to 300 degrees.
  2. Grease and flour 2 9x5 inch loaf pans or one 9x13 pan. ( I used 2, 8 x 4 pans and batter filled each slightly over 1/2 full )
  3. I also lined pans with waxed paper so raisins would not stick to pan
  4. Set aside.
  5. In a saucepan, combine the honey and coffee and bring to a boil.
  6. Cool and set aside.
  7. In a large mixing bowl, blend the eggs, brown sugar and oil.
  8. Do not over-beat.
  9. Sift the flour, baking powder and baking soda and spices together.
  10. Stir the flour and honey into the eggs alternating and ending with the liquid.
  11. Stir in the raisins.
  12. Blend well.
  13. Pour into the prepared pans and place the almonds over the cake.
  14. Bake for 60-70 minutes, or until the cake springs back.
  15. Let sit overnight before serving.
  16. Note: these freeze well also

WHY would someone rate this poorly? I just don't understand but whatever the case, you've got my 5 forks for this lovely Honey Cake recipe.


I know this cake is super, I baked and tasted it! as for ratings, it's on their end. Sometimes I think people take ratings way to seriously . or just nit pik too much!

I think some people rate bad on something they see in the recipe they dont think would be yummy but your right its on their end theres no accounting for taste eh?! my family LOVES honey cant wait to try this one thanks
