  • 2 lbs yellow squash, cleaned and sliced
  • 1 large onion, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 stick of butter

Directions
  1. Melt butter in skillet
  2. Add squash, onion, and salt/pepper
  3. Cook over medium heat until tender, stirring occasionally
  4. Cover squash for first 10 minutes of cooking, then uncover until tender

Yes, just the way my grandmother taught me to make it! Unfortunately, yellow squash or crooked neck squash isn't a big item in the Northwest, terribly expensive - $1.99 + a lb. I still buy it in the summer when I can find it.
