Crockpot Chicken Creole Recipe

This is about as easy as it gets. I made it for the folks at my hubby's work & they RAVED about it ! It really is delicious. I tripled it & it still cooked up just fine .

Ingredients
- 2 lbs skinless chicken
- 1 red or green bell pepper, chopped
- 1 lg onion, chopped
- 1 LG bunch green onions,tops and bottoms,chopped
- 2 stalks celery, diced
- 1 15-oz can stewed tomatoes, undrained and chopped
- 3 cloves garlic, minced
- 1 T granulated sugar
- 1 t paprika
- 1 t Cajun seasoning
- 1 t salt
- 1 t black pepper
- 1 T lemon juice
- Louisiana hot sauce to taste
- 2 c prepared rice
Directions
- Place chicken in bottom of crockpot.
- Add the remaining ingred. except for lemon juice, hot sauce & rice. Cover; cook on Low for 8-10 hrs or on Hi for 4-5 hrs.
- In last hr of cooking, add lemon juice & hot sauce.
- Serve over hot rice.
