Paper thin sliced potatoes in a green onion and cheese, cream sauce. Baked til tender. Made with low fat ingredients. This is an easy potato sidedish with lots of creamy, cheesy flavor!

Ingredients
  • 4 Large Potatoes - washed, peeled and sliced paper thin.
  • 4 oz. Low Fat Cream Cheese.
  • 8 oz. Fat Free Half n' Half
  • 3/4 cup Low Fat/Low Sodium Chicken Broth.
  • 1/2 cup Fresh Grated Parmesan Cheese.
  • 2 Green Onions (white and green parts) - chopped fine.
  • 2 tsp. Kosher Salt.
  • 1 tsp. Bacon Salt

Directions
  1. Pre-heat oven to 400*
  2. Thoroughly butter a 13"x9" casserole dish.
  3. Layer the potatoes evenly in the bottom of the casserole dish.
  4. In a seperate microwave safe bowl, mix together the remaining ingredients.
  5. Microwave on high for 60 seconds. Stir well and pour evenly over the potatoes.
  6. Bake uncovered on the middle rack for 40 minutes. Remove from oven, cover and let sit for 15 minutes. Serve warm.

I just made this for dinner and it was wonderful! Instead of using 1/3 less fat cream cheese, I used fat free to make it as "skinny" as possible. It was fantastic with a green salad!
