Ingredients

How to make it

  • Melt 1/2 stick butter and add it, olive oil, rum, juice from 2 limes, and zest from 1, garlic, mustard, mint, onions, cayenne, paprika, salt and pepper in large zipper bag.
  • Add chicken pieces and toss to coat.
  • Refrigerate for at least 4 hours.
  • Melt remaining butter and add juice from remaining lime, salt and pepper
  • Grill chicken on medium heat until temperature is 165, turning once, and brushing with the lime butter. This will take anywhere from 5-12 minutes each side, probably, depending on the thickness and cut of chicken pieces.
