Bakewell Pudding

- 6-8oz puff pastry shopping list
- 4-6oz Sieved strawberry jam shopping list
- 4oz Castor sugar shopping list
- 6 egg yolks shopping list
- 3oz unsalted butter shopping list
- 4oz ground almonds shopping list
- A touch of almond extract shopping list
How to make it
- Roll out the puff pastry, line a shallow pie dish with the pastry and prick the base with a fork.
- Cover the base with the Jam.
- Add the sugar, egg yolks, ground almonds and almond extract together in a bowl and beat by hand to mix.
- Melt butter in a small pan on low heat and add this to the sugar mixture to achieve a smooth batter mixture.
- Pour this filling over the jam
- Bake at 300F, 175C, or gas mark 5 for about 30 mins or until golden brown
- Serve warm with fresh cream or ice cream.
