How to make it

  • Roll out the puff pastry, line a shallow pie dish with the pastry and prick the base with a fork.
  • Cover the base with the Jam.
  • Add the sugar, egg yolks, ground almonds and almond extract together in a bowl and beat by hand to mix.
  • Melt butter in a small pan on low heat and add this to the sugar mixture to achieve a smooth batter mixture.
  • Pour this filling over the jam
  • Bake at 300F, 175C, or gas mark 5 for about 30 mins or until golden brown
  • Serve warm with fresh cream or ice cream.

    Great recipe Dee. I was first in Bakewell the very first month I was living in England. Unfortunately it was during the winter months so I should really go back when the weather is better. Haven't ever made it but I have had the dessert. Intend to make it now!
