Gourmet Magazine's editor and chief, Ruth Reichl, demonstrated her ultimate grilled cheese on PBS lately. Instead of grilling it, I baked these and cut them up into bite-sized pieces to serve at a cocktail.

I tied this last night and added red bell pepper and jalapenos and sprinkled dried chives on top. The onion mix with the peppers was a little hot so sauteed and maybe was a little too tame. Should have gone without. The baking would have mellowed it enough. It was a great easy appetizer!

My goodness this sounds absolutely decadent and wonderful. I like making grilled/fried dishes in the oven, and it's surprising how often it works! I've started looking for new food ideas for this year's holiday parties, and I think this will be a winner. Thanks!
