Gourmets Ultimate Grilled Cheese Bites Recipe

Gourmet Magazine's editor and chief, Ruth Reichl, demonstrated her ultimate grilled cheese on PBS lately. Instead of grilling it, I baked these and cut them up into bite-sized pieces to serve at a cocktail.

Ingredients
  • 1 Tbsp finely chopped red onion
  • 1 Tbsp finely chopped Vidalia (or sweet) onion
  • 1 Tbsp finely chopped scallions
  • 1 Tbsp finely chopped French shallots
  • 1 tsp finely chopped garlic
  • 4 Tbsp Dijon
  • 1/2 tsp dried Thyme (or 1 tsp finely chopped fresh)
  • 1/4 cup each shredded: Cheddar/Brick or Colby, Monterey Jack, Havarti, Jarlesburg/Emmenthaler or Gruyère (or any blend of your favourite cheeses, really)
  • 1 French baguette
  • 1 tsp white pepper

Directions
  1. Preheat oven to 400 degrees.
  2. Combine the onions, garlic, thyme and pepper in a small bowl.
  3. In a separate bowl, combine all of the cheeses.
  4. Cut the baguette in half and slice each half open lengthwise.
  5. For each piece of bread, spread 1 Tbsp Dijon, sprinkle with 1/8 of the onion mix, top with 1/4 of the cheese mix and top with additional 1/8 of onion mix.
  6. Place on a foil-lined, non-stick sprayed baking sheet and bake at 400 degrees for 10-15 minutes until cheese is oozing and loaves are toasted.
  7. Cut into triangles and serve.
  8. ***For people who don't LOVE raw onion (because these flavours, although awesome, are quite pronounced) you can sauté the onion/garlic mix in some butter for 1-2 minutes on med-high first to mellow out the flavours.

I tied this last night and added red bell pepper and jalapenos and sprinkled dried chives on top. The onion mix with the peppers was a little hot so sauteed and maybe was a little too tame. Should have gone without. The baking would have mellowed it enough. It was a great easy appetizer!


My goodness this sounds absolutely decadent and wonderful. I like making grilled/fried dishes in the oven, and it's surprising how often it works! I've started looking for new food ideas for this year's holiday parties, and I think this will be a winner. Thanks!
