Whats Italian For Hodgepodge Soup

- 1lb ground venison(or other ground meat, see above) shopping list
- 1 egg shopping list
- 1/2 cup Italian seasoned bread crumbs shopping list
- 1T Dijon mustard shopping list
- 3oz cream cheese, softened shopping list
- 1/4 cup parmesan cheese, grated shopping list
- 1t dried Italian seasoning(or 1-2T various fresh Italian herbs) shopping list
- 1 medium onion, diced shopping list
- 4 cloves garlic, minced shopping list
- 4T butter(or 2T each of olive oil and butter) shopping list
- 6 cups stock(chicken, pork, lamb, turkey or veggie) shopping list
- 1 cup orzo pasta shopping list
- 28oz crushed tomatoes, undrained shopping list
- 15oz can Canellini beans, undrained shopping list
- 3 cups fresh spinach(or similar green), chopped shopping list
- Fresh Parmesan for serving shopping list
How to make it
- In medium bowl, mix ground meat, egg, cream cheese, Parmesan cheese, Dijon, breadcrumbs and Italian herbs, until well combined.
- Set aside
- Melt butter in medium/large soup pot.
- Add onion and saute about 5 minutes, until beginning to soften
- Add garlic and saute about 2 minutes, more
- Add tomatoes, stock, beans, and orzo.
- Simmer about 10 minutes.
- Add spinach and stir to combine
- Form meat mixture into small(2T) sized balls and drop directly into simmering soup.
- Continue to simmer until soup is thickening and meat is fully cooked, about 15 minutes.
- Garnish with fresh Parmesan, if desired
- Serve

This was delicious, exactly the way you made it... I wouldn't change a thing. I loved the little hint of Dijon in the meatballs, and you're right, it's VERY hearty. Easily one of...moremalty in Missoula loved it -
