Mexican Style Meatloaf

- 1-1/2 lb. ground chuck shopping list
- 2 eggs shopping list
- 2 cups shredded cheddar, divided shopping list
- 1 tbsp Sazon seasoning shopping list
- 1 tbsp onion flakes shopping list
- 1 tbsp garlic flakes (or chopped) shopping list
- salt & pepper shopping list
- 1 tsp paprika shopping list
- 1 cup bread crumbs (or more if needed) shopping list
- 2 jars of salsa (your hottest of choice) shopping list
- 1 (8 oz) container sour cream shopping list
- 2 cans drained mushrooms shopping list
- 1 can drained kidney beans shopping list
- 1 chopped onion shopping list
How to make it
- Preheat oven to 350
- In large mixing bowl, add meat thru bread crumbs (only 1 cup of shredded cheese) and mix well
- In another bowl, mix salsa, sour cream together to well blended.
- In a 9 x 13 pan, pour salsa/sour cream mixture to cover bottom of pan.
- Shape meat in pan
- Place veggies around meat loaf in pan
- Pour balance of salsa/sour cream mixture over all and mix to blend with veggies
- Put balance of shredded cheese over top
- Cover and bake 45 minutes
