Sweet N Sour Chicken - Diabetic Friendly

- Ingredients: shopping list
- 4 boneless skinless chicken breast halves ( 4-oz each ) shopping list
- 2/3 cup water shopping list
- 1/3 cup sugar or equivalent sugar substitute shopping list
- ¼ cup reduced-sodium soy sauce shopping list
- 1 medium sweet red pepper, cut into 1-inch pieces shopping list
- 1 medium green pepper, cut into 1-inch pieces shopping list
- 2 Tbs. cornstarch shopping list
- 3 Tbs. Cold water shopping list
- Hot cooked rice shopping list
How to make it
- Preheat oven at 350 F.
- Place chicken in a 9-inch baking dish; set aside. In a saucepan, bring the water, sugar, vinegar and soy sauce to a boil, stirring constantly. Return to a boil. Combine cornstarch and cold water until smooth; gradually stir into pepper mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Pour over chicken.
- Bake, uncovered, at 350 F. for 10-13 minutes on each side or until a meat thermometer reaches 170 F. Serve with rice if desired. Yield: 4 servings.
