Ingredients

How to make it

  • Saute bell pepper for 2 minutes; add green onion and garlic and saute just till wilted.
  • Drain vegetable mixture on a paper towel.
  • Put spinach in mixing bowl. Add vegetable mixture, cumin, and salt, and stir well.
  • Add sour cream and mayonnaise; blend well.
  • Let chill for several hours before serving.

    This was a total time-saver that I will be making MANY more times to come! Supra-fast and supra-delicious! I did use fresh spinach (though next time I will be chopping it more finely), and added a Tbsp of lemon juice and a pinch of cayenne for some kick. I am thinking about a tsp of fine-diced carrot as well for my next batch, for a little extra crunch. The waterchestnuts were out of this world great! This no-soup-mix recipe is PERFECT, less salt, and I love making things as "from scratch" as possible (without preservatives and such). The best thing: my two sports-watching guy-guys have shown less interest in a deep fried platter then they did in this healthy dip, served with some pita I quickly thawed from the freezer. They ate a TON, and asked me to make more again soon. Thanks so much for this delicious addition to my kitchen arsenal!
