How to make it

  • Preheat oven to 350
  • Combine dry ingredients, set aside
  • Cream together butter and sugars, add eggs and vanilla, mix well
  • Add dry ingredients, mix well
  • Add chocolate chips
  • Line a mini muffin pan with liners. Use whatever is appropriate for the time of year. Place a rounded teaspoonful into each mini muffin liner. Bake 10-12 minutes, or until light brown. As soon as you remove them from the oven place a peanut butter cup on top of each one a press down into cookie until even with the top. Let cool in pan about 10 minutes or so and remove to a cooling rack to finish cooling. Repeat until all dough is used up. It does help to have multiple mini muffin pans that have 24 spaces.

    The combinations sound great, but what are "mini peanutbutter cups" - what could be a good sub for those? or could it be done without them?

    Yes, I do remember. They were Hermits from The Joy of Cooking. I'm pretty sure my Mom still has that copy of that book. I've got a more recent copy too. It has a great basic pancake recipe in it. My girls just made it a few days ago...They don't seem to be as "creative" in the kitchen as we were...LOL
