St Patricks Potato Cakes

- This was on the March 2010 cover of Easy Food..... an Irish food mag shopping list
- 2 Large handfuls of rocket (arrugula) shopping list
- 8 pieces of streaky bacon shopping list
- 250 grams of potatos peeled and chopped shopping list
- salt and pepper shopping list
- 90ml of milk shopping list
- 1 bunch of scallions (green onions) finely chopped shopping list
- 50g butter (and a little extra for frying) shopping list
- 125g of flour shopping list
How to make it
- Boil the potatos in salted water until cooked. Drain, mash and leave to cool.
- Place the milk in a saucepan, and the butter and bring to a boil. Add the potatos and the scallions and mix together while the mixture heats through. Fold in the flour until the mixture comes away from the saucepan.
- Turn on to a cold surface and shape into round cakes about 5cm in diameter and 3cm thick. Grill the bacon until crispy and set aside.
- Fry the potato cakes in a little butter until brown and crispy, top with bacon and a tumbling of rocket and serve immediately!

A high 5 from me.... I adore, love, crave anything in a fried, grilled potato form,,, not chips though...ughh unless I share LoL.. great recipe :)
