How to make it

  • Boil the potatos in salted water until cooked. Drain, mash and leave to cool.
  • Place the milk in a saucepan, and the butter and bring to a boil. Add the potatos and the scallions and mix together while the mixture heats through. Fold in the flour until the mixture comes away from the saucepan.
  • Turn on to a cold surface and shape into round cakes about 5cm in diameter and 3cm thick. Grill the bacon until crispy and set aside.
  • Fry the potato cakes in a little butter until brown and crispy, top with bacon and a tumbling of rocket and serve immediately!
