- Brownie base: shopping list
- · 4 tbs. butter shopping list
- · 2 oz. unsweetened chocolate shopping list
- · 1 cup sugar shopping list
- · 2 eggs shopping list
- · 1/8 tsp. salt shopping list
- · ½ cup plus 2 tbs. flour shopping list
- · 1/3 cup chopped Andes candies shopping list
- chocolate Ganache: shopping list
- · 9 oz. semisweet chocolate, chopped shopping list
- · 1-cup heavy whipping cream shopping list
- Filling: shopping list
- · 12 oz. cream cheese, room temperature shopping list
- · 6 tbs. butter, room temperature shopping list
- · 2 cups white chocolate chips shopping list
- · 1 tbs. solid vegetable shortening shopping list
- · 3/8 tsp. peppermint extract shopping list
- · 3-4 drops green food coloring (optional) shopping list
- · 1/3 cup chopped Andes candies shopping list
How to make it
- For brownie base, preheat oven to 300 degrees.
- Coat a 9-in. spring form pan with vegetable oil spray.
- In a double boiler or microwave, melt butter and unsweetened chocolate.
- In a medium bowl, beat sugar and eggs. Gradually add chocolate mixture. Mix in salt, flour, and vanilla; add Andes Candies mints.
- Pour batter into prepared pan and bake for 20-30 minutes or until toothpick inserted near center comes out clean.
- Cool completely.
- Meanwhile, for Ganache, place chocolate in a small bowl. In a small saucepan, heat cream and bring just to a boil.
- Pour hot cream over chocolate and whisk until smooth. Allow to cool slightly before using.
- For filling, in a medium bowl, combine cream cheese and butter and mix to combine.
- In a double boiler or microwave, melt white chocolate and shortening and mix well.
- Add to cream cheese and beat just until smooth.
- While mixture is beating, add extract and food coloring, if desired. Fold in Frango mints.
- Smooth filling over top of cooled brownie base and chill until firm, about two hours.
- Top with Ganache and chill until firm; 30- 60 minutes.
- To serve, remove sides of spring form pan, garnish as desired.
- Cut into small wedges.
