Ingredients

How to make it

  • In medium pan, bring 2 1/2 cups water to boil. dd 1/2 teas salt, and the rice. Turn heat to low, cover and simmer 15 minutes. Remove from heat, let sit 5 minutes, uncover and fluff with fork.
  • Whisk lemon juice, olive oil, garlic, oregano, pepper, red pepper flakes, and remaining 1 teas salt in large bowl.
  • Add rice and toss to combine.
  • Add spinach, toss, let sit about 20 minutes.
  • Add remaining ingredients and toss. Serve cold or at room temperature.

    This looks like a really healthy and tasty dish! I use Trade Joe's brown rice found in the freezer section...at least it used to be! Am bookmarking this.

    No, I have not made this with brown rice. I am sure it would be just as tasty. The white rice shows off the colors better and I am sure brown rice would certainly be healthier for you! Thanks for your comment.
