Ingredients

How to make it

  • Prepare orzo per box directions, but using chicken stock for 2 cups of the water
  • In large skillet(I use cast iron, of course ;), saute asparagus and onions in butter.
  • Cook until asparagus is al dente and onion begins to caramelize.
  • Add salt and pepper and cream, and continue to simmer to thicken
  • When orzo is done, drain, but reserve the liquid.
  • Add orzo and 3/4-1 cup of the pasta liquid to veggies and cream.
  • Add lemon zest and Parmesan cheese, stir, and heat through.

    People, you NEED to try this recipe. It's a lot easier to make than it may sound, and so delicious, you'll wonder how you went your entire life without ever having tried it before. My girlfriend is a picky eater and not only did she absolutely love this, but she went back for seconds!!

    ZOMG. I've been trying to convince the girlfriend to try orzo, but she's the type who turns her nose up at things she's never tried so I'm a little afraid to make this if she won't even try it.... do you peel your asparagus stalks before sautéing? It makes them as soft as the heads in about as little time. This looks and sounds amazing, and I might just make it and force-feed it to her one day. =)

    This dish was easy to make…believe me, if it wasn't I would not have made it. It came out so much better than I thought, and I definitely got the 'risotto' feel, or taste from it. Similar texture and taste, without the constant stirring and work. It actually became the main course, with salmon as a side! Awesome recipe.

    Aha! Here it is! I'm glad to see the dish you specially created to go with my "Grilled Salmon Brazilian Style"! I may not wait until I'm grilling the Brazilian salmon, but I'll try to wait, as I'd like to honor your culinary creative expertise in coming up with this dish as its accompaniment.
