Not Quite Just Another Potato Salad

- The salad: shopping list
- • 2 – 2 ½ lbs nice white potatoes. shopping list
- • 1 lb sausage (kielbasa, Portuguese, Italian, smoked, whatever) shopping list
- • 4 hard boiled eggs, sliced. shopping list
- • ¼ cup chopped red bell pepper. shopping list
- • 1 tsp finely chopped medium chilies (jalapeño, problamo, etc) or chili flakes. shopping list
- • 2 Tsp chopped black olives (optional) shopping list
- • 4 fresh mushrooms, thin sliced. shopping list
- • ¼ - ½ cup frozen corn. shopping list
- • ¼ cup frozen green beans. shopping list
- • ¼ cup frozen peas. shopping list
- • ½ cup grated fresh carrot. shopping list
- • The kitchen sink (optional). shopping list
- The dressing: shopping list
- • 1 cup real mayonnaise, more or less to taste. shopping list
- • 2 Tbs. olive oil, I like the old fashioned kind for the taste. shopping list
- • 1 Tbs good prepared mustard, your choice of type. shopping list
- • 2 Tbs red wine, or wine vinegar. shopping list
- • Pinch or two of oregano. shopping list
- • 1Tbs spring onion, the whole thing. (skip the roots) shopping list
- • 1 or 2 sprigs of parsley, chopped fine. shopping list
- • 1 sprig cilantro, chopped fine. shopping list
- • salt and fresh ground pepper to taste. shopping list
- • 2 Tbs sour cream. shopping list
- • 1 tsp parmesan cheese, optional. shopping list
- • 2 Tbs of drippings from frying sausage, optional. shopping list
- • water, beer or wine to adjust consistency. shopping list
How to make it
- Salad:
- 1. Scrub potatoes and cut into bite size pieces, boil until just done. If the potatoes are nice I leave the skins on See Photo. When done, drain and let cool.
- 2. Boil dem eggs. It may be cheating but I boil the eggs with the spuds. Be sure to peel them before use.
- 3. Cut your sausage into bite size chunks and fry until well done but not crisp. I cut it up before frying to get the chunks a bit crisp on all sides See Photo. When it’s done remove from skillet and set aside but save the drippings.
- 4. When the potatoes are cool enough put all of the salad ingredients, except two chunks of sausage and the eggs in a large bowl See Photo. Don’t lose the two bits of sausage.
- Dressing:
- 1. Put all of the dressing ingredients, except the water, beer or wine to adjust consistency, in a blender.
- 2. Add the two bits of sausage you kept back from the salad to the blender and blend until smooth, adjusting consistency to your liking with the water, beer or wine.
- 3. Add the dressing to the salad and fold all the stuff together gently but completely.
- 4. Garnish with a dash of paprika and the sliced eggs See Photo. A sprig or two of parsley or some pickle slices are nice.
- For this dish you can boil the potatoes and eggs and fry the sausage the night before and keep them in the fridge until you’re ready to put the salad together. Cool man, cool.

Sounds good and summery (if that is a word). We had a wind chill of 28*F this morning and got to 58*F this afternoon. I am dreaming of the 92/and may even agree to the other 92. I am one of those strange ones that don't mind the heat.
