Took about 3 recipes and combined them into one and what a super zucchini surprise we had and it was so light and fluffy Reminded us of a quiche

Ingredients
  • 1-1/2 lbs zucchini, cut into 1/2" slices
  • 1 cup onion chopped
  • 1/2 jar of drained roasted peppers (more if you like) chopped
  • 6 scallions chopped
  • 5 eggs slightly beaten
  • 1/2 cup milk
  • 1/2 - 3/4 cup sour cream
  • 2 cups of mozzerella cheese shredded
  • 1 cup of cheddar cheese shredded
  • 1 tsp salt
  • 2 tsp baking powder
  • 3 tbsp flour
  • 1/2 bag of stuffing cubes
  • 1/2 cup bread crumbs
  • garlic powder
  • pepper
  • Butter

Directions
  1. Combine eggs, milk, sour cream, cheeses, seasonings, baking powder and flour.
  2. Stir in zucchini, onions, scallions & peppers into egg mixture
  3. Butter a 9 x 13 pan
  4. Spread stuffing cubes over pan
  5. Pour zucchini/egg mixture over cubes
  6. Sprinkle bread crumbs over top
  7. Dot with butter over bread crumbs
  8. Bake in 350 oven
  9. Cook at least 60 minutes.
  10. Mixture in pan should be firm not giggly and eggs should be cooked thru
  11. Rest 5 minutes before serving
