Janets Zucchini Surprise

Took about 3 recipes and combined them into one and what a super zucchini surprise we had and it was so light and fluffy Reminded us of a quiche
Ingredients
- 1-1/2 lbs zucchini, cut into 1/2" slices shopping list
- 1 cup onion chopped shopping list
- 1/2 jar of drained roasted peppers (more if you like) chopped shopping list
- 6 scallions chopped shopping list
- 5 eggs slightly beaten shopping list
- 1/2 cup milk shopping list
- 1/2 - 3/4 cup sour cream shopping list
- 2 cups of mozzerella cheese shredded shopping list
- 1 cup of cheddar cheese shredded shopping list
- 1 tsp salt shopping list
- 2 tsp baking powder shopping list
- 3 tbsp flour shopping list
- 1/2 bag of stuffing cubes shopping list
- 1/2 cup bread crumbs shopping list
- garlic powder shopping list
- pepper shopping list
- butter shopping list
How to make it
- Combine eggs, milk, sour cream, cheeses, seasonings, baking powder and flour.
- Stir in zucchini, onions, scallions & peppers into egg mixture
- Butter a 9 x 13 pan
- Spread stuffing cubes over pan
- Pour zucchini/egg mixture over cubes
- Sprinkle bread crumbs over top
- Dot with butter over bread crumbs
- Bake in 350 oven
- Cook at least 60 minutes.
- Mixture in pan should be firm not giggly and eggs should be cooked thru
- Rest 5 minutes before serving
