Coconut Rice

- coconut rice shopping list
- 2 cups jasmine or basmati rice, uncooked shopping list
- 1 can (14 ounces) coconut milk shopping list
- 1 1/2 cups water shopping list
- 1 to 2 teaspoons sugar shopping list
- salt and pepper to taste shopping list
- Chopped, fresh parsley shopping list
How to make it
- In a pot with a tight-fitting lid, combine the coconut milk, water, sugar, salt and pepper. Stir, making sure sugar dissolves. Add the rice and bring to boil. Cover, reduce heat and cook for about 20 minutes or until rice is tender.
- Pour into a serving bowl and garnish with the chopped parsley. Serve.

coconut rice is my fave although i add lemon grass and salam leaf(indian bayleaf), the presentation is soo prety

Oh my goodness this has everything I like... I like the idea of ginger too.
I can get Thai Brown Jasmine Rice from this little Oriental Store that is about a 5 minute walk from my house. I love it.
