How to make it

  • In a pot with a tight-fitting lid, combine the coconut milk, water, sugar, salt and pepper. Stir, making sure sugar dissolves. Add the rice and bring to boil. Cover, reduce heat and cook for about 20 minutes or until rice is tender.
  • Pour into a serving bowl and garnish with the chopped parsley. Serve.

    I made this tonight after having this type of rice at my neighbors house! This was delicious! I made it as written except I added one can of pigeon peas and I omitted the parsley. I used basmati rice. This is my new favorite rice dish! I added my photo :)

    As a devout coconut lover, this rice recipe is just too perfect! I cannot wait to try it. As you've probably noted, most of the recipies I've posted contain coconut. The more the better...

    It's the coconut milk that gives it the name.. use jasmine or basmati rice for the recipe.. enjoy!

    Oh my goodness this has everything I like... I like the idea of ginger too.

    I can get Thai Brown Jasmine Rice from this little Oriental Store that is about a 5 minute walk from my house. I love it.
